The Winery

The Fossi winery was founded in Signa in 1986, when Enrico Fossi chose to plant international grape varieties uncommon in Tuscany, with the ambition of crafting wines built for depth and longevity.
Today he is joined by his son Sasha, a trained winemaker, sharing the same determination in following vineyards and wines day after day. We rely on carefully selected varieties, a distinctive microclimate and native yeast fermentations to create wines with character, depth and a clearly defined personal signature.

The Fossi Way

In the cellar each wine is followed individually, through frequent tastings and a small number of well-judged decisions. We work exclusively with barriques, using long ageing periods that vary according to grape variety and vintage. The aim is to integrate structure, fruit and oak without force, creating wines of depth and clarity, able to evolve over time while remaining true to our philosophy.

Our Microclimate

Our vineyards are located in Signa, on the outskirts of Florence, in a transitional area between Chianti and Carmignano. Here, exposed slopes and the proximity of river corridors create evening breezes and marked temperature shifts, helping to preserve freshness even in warmer vintages. Low yields allow us to harvest healthy fruit, retain vibrant acidity and craft wines of depth and precision.
